North Star Caviar Grant Program

North Star Caviar is a unique NON-PROFIT company, which began in 1993 as a joint venture of two non-profit organizations...the Williston Area Chamber of Commerce and the Friends of Fort Union/Fort Buford. Our cooperative vision was to use this business as a revenue generating mechanism, easing the stressed local economy of its pressure to fund worthy projects both groups were involved in promoting.

The North Dakota Game and Fish Department receives the first 25% of our net proceeds each year to fund paddlefish research costs, ensuring the sustainability of the paddlefish resource. The remaining proceeds are granted back to non-profit groups in the region for historical, cultural, and recreational projects and efforts which improve conditions of habitat and land and water access for outdoor activities.

Since its inception in 1993, North Star Caviar has channeled nearly half a million dollars for paddlefish research, and funded over $1,250,000 in grants toward projects enhancing the quality of life for people of all ages.

Grant applications and guidelines are available in January and are generally due by March 1 of each year.

Surprised about caviar originating from the land locked center of North America? Our exquisite caviar hails from the historic and cold waters of the Missouri and Yellowstone Rivers of legendary North Dakota. Connoisseurs tell us our pristine cold waters produce a caviar that is “truly different...no aftertaste.” Our premium gourmet malossol paddlefish caviar is mild with tender olive to steel gray berries, lightly salted, all natural, and contains no added preservatives. We have been featured in Bon Appetit, O the Oprah Magazine, and Midwest Living.

The prehistoric paddlefish, from which we derive our paddlefish caviar, still thrives today in the protected waters of the scenic area Lewis and Clark penned “open and beautifully diversified.” Under an agreement forged with the North Dakota Game and Fish Department, paddlefish eggs are donated to the project by successful sport fishermen in exchange for fish cleaning services. The paddlefishing season runs May 1-31. The roe is then processed into premium caviar and sold on the world market. North Star Caviar is licensed for export and international CITES trade.

North Star Caviar is environmentally responsible. Protecting the paddlefish and its necessary spawning habitat is a priority of the North Dakota Game and Fish Department, who licenses and oversees North Star Caviar’s operation. The Department regulates the length of the paddlefishing season and the annual harvest ceiling. Net proceeds from this project fund paddlefish research; expert biologists work on site collecting data. North Star only handles legally tagged fish from licensed fishermen.
